Fried clams
Instructions
Wash the clams and place them in a saucepan with water to make them open.
Peel, leaving aside a few for garnish.
Filter their water.
In a Pan fry 2 cloves of garlic, chopped parsley and 4 tablespoons of olive oil.
Then add the clams, salt pepper and very little, wet the whole with a glass of white wine.
Simmer for a few minutes.
Beat the eggs and salandole add 2 tablespoons milk; with this compound make an omelette.
Then pour in the center of the omelet clams with their juice, close the frittata and garnish with whole clams.
