Greek Mushrooms (Funghi Alla Greca)
Instructions
Fine chop onions and carrots, let soften in 2 tablespoons of olive oil and seed oil, add the wine and bouquet of smells.
Add the mushrooms, washed, rubbed with lemon (whole if small, cut in half if large), peeled tomatoes, deprived of seeds and cut into small pieces.
Add salt and pepper, add the coriander seeds and Peel (yellow part only) of lemon, Cook 15 minutes.
Put in jars (you probably multiplied the doses for 2 or for 4) and sterilize.
Are preserved well.
Serve cold in a dish, garnished with lemon slices and cannellate sprinkling of chopped parsley.

- 500 g of mushrooms
- 2 onions
- 2 carrots
- 4 tablespoons of olive oil
- 4 tablespoons of peanut oil
- 75 cl of white wine
- 1 bunch of smells (thyme, bay leaf, celery)
- 1 lemon
- 4 tomatoes
- Some of coriander grains
- Salt
- Pepper
